Tomato and Avocado Salad has got to be summer’s most perfect salad.
Made with ripe tomatoes, creamy avocado and diced purple onion all doused with a cilantro and lemon juice dressing. It is totally divine. Once I learned how to make it, I became addicted. If you like guacamole, you will love this salad. It consists of all the primary ingredients as the famous dip, but this salad is definitely not for snacking.
This is an intensely flavorful salad that pairs beautifully with steak or chicken. I served this one night when we were entertaining guests, and my friend put several spoonfuls of this salad on top of the hamburger we just grilled for her. It is bright and bold and a show stopper to add to your menu.
I’ve found that it is best to make and serve this salad on the same day. It will however, keep quite nicely overnight thanks to the lemon juice that slows the browning of the avocado. In the morning, this salad would be awesome in a breakfast burrito with eggs and bacon. Just saying.

Tomato and Avocado Salad
Tomato and Avocado Salad Recipe (serves 4):
- 1 lb. of tomatoes, sliced and seeded (Roma or Heirloom)
- 2 ripe avocados, pitted and sliced into chunks
- 1/2 of a small purple onion, diced
- 1/4 cup of fresh cilantro, minced
- Juice of one lemon
- 2 T olive oil
- Salt and pepper to taste
Prepare the tomatoes, avocado, onion and combine in a medium-sized bowl. Add the cilantro, lemon juice, olive oil and salt and pepper. Gently mix all the ingredients until everything is covered in the dressing. Cover and refrigerate for about 2 hours. Enjoy!
