Papaya and Lime Snack
Growing up on a tropical island was sublime. Fruits like mangoes, bananas and pawpaws (papaya) were an everyday staple and we even had a small orchard that we would harvest fruits from. Whenever I see fresh papaya is takes me back to Jamaica. My favorite way to eat papaya is to sprinkle it with fresh lime juice. The acid of the lime juice really elevates the papaya and enhances this mild tasting fruit into something that reminds me of breakfast on the islands. At around 55 calories per serving, papaya is very low in saturated fat, cholesterol and sodium. It is also a good source of fiber and an excellent source of vitamins A, C and folate.
