Whenever we are on vacation I completely steer away from beer and wine in favor of something special. During our last vacation in Jamaica, the resort made a delicious variation of a Jamaican Sunrise consisting of three layers of frozen fruit juice (strawberry, papaya and mango) that was topped with almost an inch of dark rum. I vacillated between that and frozen pina coladas, another drink that they had mastered. I will say that I was hesitant at first to order the Pina Colada, many times, the drink is entirely pre-made and you can taste the artificialness. What sets their Pina Coladas apart from a pre-mix is using fresh fruit and high quality rum.
Life is too short to wait until you are on holiday to drink your favorite frozen fruity cocktails. Wouldn’t you agree? Here are the ingredients and directions to whip up a tropical drink that will take you away without leaving your home.
Pina Coladas Recipe
Ingredients for two Pina Coladas:
2 cups of ice
1/2 cup fresh pineapple (cut into small pieces)
4 ounces fresh pineapple juice
1 & 1/2 ounces coconut cream (Coco Lopez)
2 ounces Myers Platnium white rum
2 ounces Myers dark rum
Fresh pineapple slices, cut into triangles for garnish
Directions
Put the ice, fresh pineapple, fresh pineapple juice, coconut cream, and the white rum into a blender. Blend until smooth. Pour the drink into two glasses, slowly pour 1 ounce of Myers dark rum on the top of each drink and garnish with a pineapple slice. Serve immediately.
