Healthy Kale and Berry Smoothie
Making healthy smoothies in our home is a regular thing, we either make them in the morning for breakfast or as an afternoon snack. My kiddos love fruit (thankfully) and I want to introduce it to them in as many ways as possible. I’m also experimenting with ways to incorporate kale into their diet, which can be challenging for developing palettes. Even for me, kale simply wasn’t a regular part of my supermarket list until several years ago. A visit to my aunt in Florida, had a significant impact on me when she served kale chips one evening as an appetizer. Now, I love kale salads and her kale chip recipe here, is incredibly delicious – I actually prefer them over potato chips. Turning my sights to my kids, making a kale and berry smoothie is a foolproof way to get this all important superfood into their meal plan. Making this smoothie couldn’t be any easier, and you can use any combination of your favorite fruits. I like serving them in pretty glasses with a fruit garnish because it makes it feel more like a treat!
Here is the recipe we use:
Healthy Kale and Berry Smoothie:
1 cup of kale (washed and chopped)
1/2 cup of blueberries
1/2 cup of strawberries
1/2 cup of organic vanilla yogurt
1/2 cup of lowfat milk
Blend all ingredients until smooth and serve immediately. You can add bananas if you like!
