TGIF! It has been a long time since I have wanted a Friday to arrive this badly. It’s the eve of Christmas Eve. Even though both the kiddos have half days from school, I’m keeping them home with me. Our holiday break starts this morning and it makes me so happy to know that I’ll have my children with me, 24/7 for the next week or so.
For the past several days, our 4-year old, Catherine has been over the moon about Christmas. Between the advent calendar, preschool crafts and parties, she has had constant reminders that Santa Claus is coming to town. Every day, she asks me if Christmas is the next day. She can’t contain her excitement and I am totally indulging her. My mom always did such a nice job of creating a beautiful Christmas and I consider it a rite of passage as a parent to create the same magical experience for my children.
Today, is a baking today. We’ll be baking and decorating cookies for Santa, and preparing other food for Sunday. Our Christmas Dinner menu will consist of French 75 cocktails as an aperitif, massaged Kale Salad with apples, pecans and parmesan in a vinaigrette, followed by prime rib served with cheesy scalloped potatoes and roasted brussels sprouts with crispy bacon. Dessert will be my all-time favorite. Bobby Flay’s gingerbread and lemon curd trifle with blackberry sauce. It is quite possibly, the best thing I have ever eaten.
