Recently, a friend and I went to The Stand juice company located in Fairfield, Connecticut. The Stand is a strictly organic company that serves a variety of juices, smoothies, sandwiches and salads – click here for their full menu. I love a good salad, but at heart, I am a sandwich girl. I ordered the B.O.C. sandwich (the star ingredient is avocado) to which you can add other toppings, so I got it “loaded” with tomato. The warm toast paired with perfectly ripe avocado, tomato and a sprinkle of salt and cayenne pepper made it one of the most delicious sandwiches I have ever eaten. There is something about a simple sandwich that is so satisfying and I’ve found that there is an enormous difference in the flavor of organic foods compared to mass produced brands. It is totally worth an extra trip to visit a store or stand that sells organic fruits and vegetables. I had all the ingredients at home so I recreated it.

To remove the avocado easily from the skin, I slice strips of the avocado with a knife.
Using a spoon, I insert the spoon in between the avocado and the skin and it lifts right out.
Add tomato, avocado slices and sprinkle with salt and cayenne pepper.
The avocado will store nicely in the refrigerator if you wrap it tightly in plastic!
